Cod and Leek Parcels

This requires a little preparation in advance but it is easy to assemble and combines complementary flavours.

As usual, I prefer to use salt cod and this is what I did.

Serves 2:

300g cod, de-salted (see previous posts using cod)

2 medium-size leeks

juice of half a lemon to sprinkle on the cooked cod

vinaigrette

1. Steam the de-salted cod and the leeks in separate pots or pressure cookers.

2. Let them cool slightly and split the leeks in half. Fill them with the shredded cod and close the parcel with the other half of the leek. Use some green leek leaf to tie the parcels gently.

3. Drizzle with vinaigrette and eat immediately.
